American Cooking: The Northwest: Recipes
1 teaspoon finely chopped garlic
4 large firm ripe tomatoes, peeled, seeded and coarsely chopped (see lingcod with garlic and tomatoes, page 31)
1/2 teaspoon salt
Freshly ground black pepper
2 halibut steaks, each about 1 pound and cut 1 inch thick
8 flat anchovy fillets, drained, washed under cold running water and patted dry with paper towels
6 ripe black pitted olives cut in half lengthwise
Preheat the oven to 400°. Melt z tablespoons of the butter in a heavy 10- to 12-inch skillet and when the foam subsides add the chopped garlic. Cook over moderate heat, stirring frequently, for about 1 minute, or until the garlic is soft but not brown. Stir in the tomatoes, raise the heat to high, and cook for 3 to 5 minutes, or until all of the liquid has evaporated and the tomatoes have thickened enough to hold their shape loosely in a spoon. Add the salt and a few grindings of black pepper, and then stir in the chopped parsley. Taste for seasoning.
With the remaining tablespoon of butter and a pastry brush, coat the bottom and sides of a baking dish just large enough to hold one halibut steak. Lay one steak in the dish and spread it with half of the tomato sauce. Arrange 4 of the anchovy fillets side by side on top of the sauce, and scatter half of the sliced black olives over them. Cover with the second halibut steak, spread with the remaining sauce, and arrange the remaining anchovies and black olives on top. Bake in the center of the oven for 15 minutes. Then, with two spatulas, transfer the fish to a hot serving platter. Pour any sauce remaining in the baking dish over the fish and serve at once.
